Ingredients
- Pork legs (500g)
- Corn or tapioca starch (3g starch/5g pork)
- Eggs (1/100g starch)
- Salt (exact proportion unknown)
- Cooking wine
- Soy sauce
- Pepper

Steps
- Cut the pork legs into 5mm thin slices
- Marinate the pork slices with salt, cooking wine, soy sauce, and pepper (30 minutes)
- Decant off the liquid.
- Add in starch and eggs into the bowl and mix until the starch/egg mixture become homogeneous. This mixture should surround the pork.
- Add oil into the pot and heat until the oil temperature reaches 150C (3 minutes)
- Drop 4-5 pieces of pork into the pot of hot oil. Once a piece has been dropped, wait 15 seconds and then use chopsticks to separate the stuck pieces apart.
- Cook until it looks like the ones shown on the picture. May have to do it in batches if the pot is small. (5 minutes)
- Serve hot. The dish can only last for half an hour.
