Cooking: Sichuan Fried Pork

Sichuan Style Fried Pork adaptable to frying tofu

Ingredients

  1. Pork legs (500g)
  2. Corn or tapioca starch (3g starch/5g pork)
  3. Eggs (1/100g starch)
  4. Salt (exact proportion unknown)
  5. Cooking wine
  6. Soy sauce
  7. Pepper

Tools

  1. Pot
  2. Mixing bowl
  3. Thermometer
  4. Gloves (optional)

Steps

  1. Cut the pork legs into 5mm thin slices
  2. Marinate the pork slices with salt, cooking wine, soy sauce, and pepper (30 minutes)
  3. Decant off the liquid.
  4. Add in starch and eggs into the bowl and mix until the starch/egg mixture become homogeneous. This mixture should surround the pork.
  5. Add oil into the pot and heat until the oil temperature reaches 150C (3 minutes)
  6. Drop 4-5 pieces of pork into the pot of hot oil. Once a piece has been dropped, wait 15 seconds and then use chopsticks to separate the stuck pieces apart.
  7. Cook until it looks like the ones shown on the picture. May have to do it in batches if the pot is small. (5 minutes)
  8. Serve hot. The dish can only last for half an hour.
